Visit to Restaurant Amass

This week at CIID we visited the restaurant Amass. Matt Orlando is the chef and owner of Amass, a fine dining restaurant across the water from the centre of Copenhagen. He showed us their garden and fermentation room that together supply almost all of the vegetables they serve, and keep their waste at a minimum.

After the visit we had a great lunch at a nearby cafe.
